The production secret of 7D mango is all about care and attention given to the mango fruit from its birth.

Plantation

In the month of March in the Philippines, the heat of summer season starts to rise. So as the mango trees around the country starts to expose their buds. From the first sight of the first bud, the whole tree will be covered with light green colored buds within 2 weeks. After 2 to 3 weeks, the buds will start to open and suddenly change the whole appearance of the tree from green to bright yellow flowers. The flowers will give nice scent that will start to attract bees and flies to start pollination.

菲律宾的三月正是夏季正式降临的日子。当芒果在全国各地开始萌芽的时候,第一眼看去,芒果树呈现出一点淡淡的绿色。这种现象将在两周内持续。2~3周后,嫩芽全部开花,形成一片金黄灿烂的花海。花朵的芬芳将吸引蜜蜂和蝴蝶前往采集花粉。

While the flowers are blooming, manual pollination is required to maximize the pollination process and ensure a higher yield of fruits to harvest at the end of the season. Due to the size of the mango trees (10 to 30mtrs.), artificial pollination is not an easy task. It requires large scale of intensive labor.

花开之后,人工授粉将最大限度地令其在收获期获得丰收。由于芒果树的高度(10~30公尺),人工授粉并不是一件容易的事,需要大量的熟练劳力。

After approximately one week, little green mangoes now start to appear. This is a critical point where mango producers need to wrap with plastic bag each mango to prevent scars, disease and pests. This can only be done using manual labor. Unlike other variety of mangoes, Philippine mangoes are more delicate, it has softer skin and juicer so it can easily get bruised during handling and transportation. Extra care must be given during harvest to avoid spoilage.

一个星期之后,浅绿的芒果长出。这是个关键的时刻,因为每一只芒果都需要用塑料袋包裹妥当以防止表面产生划痕或病虫。这个程序需纯手工操作。跟其他芒果不同的是,菲律宾芒果更容易受损,它柔弱的表皮很容易在操作和运输过程中被磨损。所以我们要特别关注它们在成熟前的这个阶段,以防损伤。

Storage储藏
During harvest season in the months between June and October, as the mangoes are not ripe at exactly the same time, some needs few more days to reach the optimum level of ripeness. Mangoes are then store in a controlled environment sorted depending on their ripeness. This procedure optimizes the highest level of sweetness and aroma of the mangoes.

六月到十一月是丰收期,由于每个芒果成熟的时间不统一,有些芒果需要多等待几天才能达到成熟的标准,芒果将会根据自身的成熟程度而储存在严控的环境里。这个程序优化了芒果高品质的甜酸口味。

Washing and peeling section清洗和去皮
Mangoes are sorted manually based on color, size and if the fruit shows signs of any deformities before washing. The mangoes are then washed and will send to the peeling section by conveyor. At the peeling section, mangoes are peeled approximately 1 mango per second by hand. After peeling it will be washed again before moving to slicing section. In this section, it is being controlled again should there be skin left after the peeling section.
At this point, the skin and other unusable parts are reused as fertilizer and fodders to the domestic animals.

在清洗之前,我们按颜色,体积以及形态是否畸形来挑选芒果。清洗后芒果将送放在传送带上等待削皮。每只芒果去皮前需一秒左右用人手大略去一次。去皮之后,芒果需再清洗一次,然后送往切割部门。也需要控制的是,该道工序留下的芒果皮不得用于肥料或家禽的饲养。

Slicing section切割
The mangoes are sliced in three sections. The prime side (the portion with thickest flesh) will be used for producing dried mangoes. The side section will go to the candy making section and the stone (seed) will be used for producing nectar and puree.

芒果切割成三部分。主块(果肉最肥厚的部分)将用于制作芒果干。其他果肉将用于制作芒果糖。芒果核(种子)将用于制作芒果饮料和芒果汤。

Drying干燥
At the dried mango production line, sliced mangoes are washed again to avoid oxidation and on straight to the mechanical dryer. The amount of moisture content can be adjusted in the mechanical dryer to suit the desired chewy and softness and of the dried mango. At the end of the drying procedure, sugarcane is added to maintain the sweetness of mangoes and to keep the dried mangoes from sticking.

在进入芒果干燥的生产线前,切好的芒果条将再清洗一次以防止氧化,然后直接进入干燥机。干燥程度将根据芒果干适宜的咀嚼度和柔软度而调整。在干燥程序的末尾,要加入蔗糖以保持甜度以免芒果干粘黏在一起。

Packing包装
The mangoes are conveyed directly to the automatic weighing machine and filling machine. Here the dried mangoes are weight and adjusted is needed to meet the required weight before packing. At the packing section, when the sachets are closed, then it will go through labeling and impurities and metal detector machine.

芒果干将传送于自动称量系统以及装袋系统,这样将使包装中的芒果干重量达到相应的要求。小袋封口的同时,将印上标签以及进行杂质和金属检查。

In the month of March in the Philippines, the heat of summer season starts to rise. So as the mango trees around the country starts to expose their buds.
